Ingredients
1 (8.5 oz) box Jiffy Corn Muffin Mix
1 (15 oz) can whole kernel corn, drained
1 (15 oz) can cream-style corn
1 cup sour cream
1/2 cup (1 stick) unsalted butter, melted
2 large eggs, lightly beaten (optional for extra richness)
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional Toppings:
1 cup shredded cheddar cheese (for a cheesy version)
2 tablespoons chopped chives or parsley (for garnish)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar casserole dish.
2. In a large bowl, combine Jiffy mix, whole corn, cream corn, sour cream, melted butter, and eggs (if using). Stir until just combined — do not overmix.
3. Add salt and pepper, and fold in cheese if desired.
4. Pour the mixture into the prepared baking dish.
5. Bake for 45–50 minutes, or until the top is golden and the center is set.
6. Let cool for 5–10 minutes before serving. Garnish with chives or parsley if desired.
