Ingredients
- Kale
- White beans (canned or cooked)
- Cherry tomatoes
- Red onion
- Olive oil
- Lemon juice
- Salt
- Pepper
- Feta cheese (optional)
Instructions
- Prepare the kale: Wash the kale leaves thoroughly and remove the stems. Chop into bite-sized pieces and place in a bowl. Drizzle olive oil over and massage the kale for 2-3 minutes until slightly wilted.
- Add the beans and veggies: Rinse white beans and add to the bowl. Slice cherry tomatoes in half, dice the red onion, and add these to the salad.
- Season the salad: Squeeze fresh lemon juice over the salad and season with salt and pepper to taste.
- Toss together: Use two spoons or your hands to gently combine all ingredients.
- Garnish: Crumble feta cheese on top if desired.
- Serve: Enjoy immediately, or allow to sit for improved flavor meld.
