Description

A nutritious and flavorful salad made with kale, white beans, and fresh vegetables, dressed with lemon juice and olive oil.


Ingredients

  • Kale
  • White beans (canned or cooked)
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Lemon juice
  • Salt
  • Pepper
  • Feta cheese (optional)

Instructions

  1. Prepare the kale: Wash the kale leaves thoroughly and remove the stems. Chop into bite-sized pieces and place in a bowl. Drizzle olive oil over and massage the kale for 2-3 minutes until slightly wilted.
  2. Add the beans and veggies: Rinse white beans and add to the bowl. Slice cherry tomatoes in half, dice the red onion, and add these to the salad.
  3. Season the salad: Squeeze fresh lemon juice over the salad and season with salt and pepper to taste.
  4. Toss together: Use two spoons or your hands to gently combine all ingredients.
  5. Garnish: Crumble feta cheese on top if desired.
  6. Serve: Enjoy immediately, or allow to sit for improved flavor meld.
