Ingredients
1 1/2 cups unsweetened almond milk
1/4 cup almond flour
2 tbsp butter or coconut oil
2 tbsp granulated erythritol or other keto sweetener
1/2 tsp vanilla extract
1/8 tsp salt
Optional: pinch of cinnamon or cocoa powder for flavor
Instructions
1. In a small saucepan, whisk together almond flour, sweetener, and salt.
2. Add almond milk gradually while whisking to avoid lumps.
3. Place over medium heat and cook, stirring constantly, until the mixture thickens (about 5–7 minutes).
4. Remove from heat and stir in butter and vanilla extract until smooth.
5. Pour into small bowls or ramekins and let cool.
6. Refrigerate for at least 1 hour before serving.
7. Top with a sprinkle of cinnamon or whipped cream if desired.
Notes
You can adjust the sweetness to taste with more or less keto sweetener.
For extra flavor, try adding almond extract or cocoa powder.
