Description
Buttery, melt-in-your-mouth keto snowball cookies made with almond flour and powdered sweetener, rolled in a snowy coating for a classic low-carb holiday-style treat.
Ingredients
2 cups almond flour
1/2 cup powdered erythritol or monk fruit sweetener
1/2 cup unsalted butter, softened
1 tsp vanilla extract
1/4 tsp salt
1/3 cup chopped pecans or walnuts
Extra powdered sweetener for rolling
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, cream butter and powdered sweetener until smooth.
3. Mix in vanilla extract and salt.
4. Add almond flour and chopped nuts; mix until a dough forms.
5. Scoop dough and roll into 1-inch balls.
6. Place on prepared baking sheet.
7. Bake for 10–12 minutes until set but not browned.
8. Cool slightly, then roll cookies in powdered sweetener.
9. Allow cookies to cool completely and roll again if desired.
Notes
Do not overbake—cookies should stay pale.
Store in an airtight container for up to one week.
Freezes well for longer storage.
