- ½ teaspoon salt
- 1 cup powdered sugar
- 1 tablespoon key lime juice
- 1 tablespoon milk
- ¼ teaspoon vanilla
- Pinch of salt (optional)
- ½ teaspoon key lime zest
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a baking sheet with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract and mix until just combined.
- Add key lime zest to the mixture.
- Combine the flour, baking soda, and salt in another bowl and gradually add to the wet ingredients.
- Scoop the dough onto the prepared baking sheet, leaving enough space between each scoop.
- Bake the cookies for 10-12 minutes until the edges are light golden brown.
- Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack.
- Mix the glaze ingredients and drizzle over the cooled cookies if desired.
Notes
For the best flavor, use fresh key limes rather than bottled juice. Don’t overbake to maintain softness.
