Bright, tangy, and creamy Key Lime Pie Energy Bites made with cashews, coconut, and dates.
Ingredients

1 cup raw cashews
1 cup shredded coconut
1 cup Medjool dates, pitted
2 tbsp fresh lime juice
1 tbsp lime zest
Pinch of sea salt
1 tsp coconut oil
Optional: 1 tbsp honey or maple syrup
Instructions
1. Soak cashews for 30 minutes.
2. Blend cashews, coconut, dates, lime juice, zest, salt, and coconut oil.
3. Taste and adjust sweetness.
4. Scoop and roll into balls.
5. Coat in shredded coconut.
6. Chill before serving.
Notes
Store in refrigerator up to 1 week.
Freeze up to 3 months.
Roll in matcha or cocoa powder for variations.
