- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- Parmesan cheese for serving
- Fresh basil for garnish
Instructions
- Brown the meat: In a large pot, heat a bit of oil over medium heat. Add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is soft, about 5 to 7 minutes.
- Drain the fat: Carefully drain any excess fat from the pot to prevent a greasy soup.
- Add the liquids: Pour in the beef broth, diced tomatoes (with their juice), and tomato paste. Mix well for rich flavor.
- Season the soup: Stir in the Italian seasoning, salt, and pepper to taste. Bring to a boil.
- Cook the noodles: Add the broken lasagna noodles and simmer for about 10-12 minutes, stirring occasionally.
- Incorporate the cheeses: Once the noodles are tender, stir in the ricotta cheese and half of the mozzarella cheese, heating through for 2-3 minutes.
- Serve hot: Ladle the soup into bowls, topping with remaining mozzarella, Parmesan cheese, and fresh basil.
