A cozy one-pot lasagna soup packed with ground beef, tomatoes, noodles, and Italian spices—everything you love about lasagna in comforting soup form.
Ingredients
1 tbsp olive oil
1 lb (450 g) ground beef (or Italian sausage)
1 onion, diced
3 garlic cloves, minced
1 tsp dried oregano
½ tsp red pepper flakes (optional)
2 tbsp tomato paste
1 can (28 oz / 800 g) crushed tomatoes
6 cups chicken or beef broth
2 tsp sugar (to balance acidity)
8 lasagna noodles, broken into pieces
Salt & black pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
2. Stir in diced onion and garlic, cooking until softened and fragrant.
3. Add oregano, red pepper flakes, and tomato paste. Stir and cook for 1–2 minutes.
4. Pour in crushed tomatoes, broth, and sugar. Bring to a gentle boil.
5. Add broken lasagna noodles. Reduce heat and simmer 15–20 minutes until pasta is tender.
6. Season with salt and black pepper to taste.
7. Ladle into bowls and serve hot with Parmesan or ricotta on top if desired.
Notes
Top with ricotta, mozzarella, or Parmesan for that classic lasagna cheesiness.
You can substitute ground turkey or chicken for a lighter version.
