Description

Quick, crispy, and cheesy  these Lazy Chicken Quesadillas are the easiest way to enjoy a satisfying meal in minutes! Perfect for busy weeknights or after-school snacks.


Ingredients

2 cups cooked shredded chicken

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup salsa or taco sauce

1/2 tsp garlic powder

1/2 tsp chili powder

4 large flour tortillas

1 tbsp butter or olive oil


Instructions

1. In a bowl, mix shredded chicken, both cheeses, salsa, garlic powder, and chili powder.

2. Lay out two tortillas and spread the chicken mixture evenly on each.

3. Top with the remaining tortillas to form quesadillas.

4. Heat a skillet over medium heat and melt a little butter or drizzle oil.

5. Cook each quesadilla for 2–3 minutes per side until golden brown and cheese is melted.

6. Remove from pan and slice into wedges.

7. Serve hot with sour cream, salsa, or guacamole.

Notes

Use rotisserie chicken for extra convenience.

Try adding corn, beans, or jalapeños for variety.

Can be made ahead and reheated in an air fryer or skillet for a crispy finish.
