Description
A light and fragrant flatbread infused with fresh lemon zest and basil soft, chewy, and perfect for dipping, topping, or enjoying straight out of the oven.
Ingredients
2 cups all-purpose flour
1 tsp instant yeast
1 tsp salt
1 tbsp sugar
3/4 cup warm water
2 tbsp olive oil (plus extra for brushing)
1 tbsp lemon zest
2 tbsp finely chopped fresh basil
Flaky sea salt for topping
Instructions
1. In a mixing bowl, combine flour, yeast, salt, and sugar.
2. Add warm water and olive oil; mix until a soft dough forms.
3. Knead on a lightly floured surface for 5–7 minutes until smooth and elastic.
4. Gently fold in lemon zest and chopped basil until evenly distributed.
5. Place dough in a lightly oiled bowl, cover, and let rise until doubled, about 1 hour.
6. Preheat oven to 450°F (230°C) with a baking stone or sheet inside.
7. Divide dough into 2–3 portions and roll each out into an oval or round flatbread.
8. Brush with olive oil and sprinkle with flaky salt.
9. Bake 6–8 minutes, until puffed and golden brown.
10. Serve warm with olive oil, hummus, or as a base for light pizzas.
Notes
For extra flavor, brush with garlic butter or lemon olive oil after baking.
Add grated parmesan or feta before baking for a cheesy twist.
This dough also grills beautifully — just cook each side for 2–3 minutes over medium heat.
