Delicious and nutritious no-bake protein bites combining lemon and blueberry flavors, perfect for a healthy snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup fresh blueberries
  • 1/2 cup protein powder (vanilla or unflavored)
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Combine ingredients: In a large mixing bowl, add rolled oats, almond butter, honey (or maple syrup), and protein powder.
  2. Add flavor: Sprinkle in lemon zest and squeeze in lemon juice. Add a pinch of salt.
  3. Mix everything: Use a spatula or spoon to combine all ingredients until well blended.
  4. Fold in blueberries: Gently add fresh blueberries without mashing them.
  5. Form the bites: Roll a small amount of mixture into balls about 1 inch in diameter and place on a parchment-lined baking sheet.
  6. Chill and firm up: Refrigerate for at least 30 minutes to help bites firm up.
  7. Store properly: Transfer to an airtight container and keep in the fridge for up to a week.
