Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup fresh blueberries
- 1/2 cup protein powder (vanilla or unflavored)
- Zest of 1 lemon
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- Combine ingredients: In a large mixing bowl, add rolled oats, almond butter, honey (or maple syrup), and protein powder.
- Add flavor: Sprinkle in lemon zest and squeeze in lemon juice. Add a pinch of salt.
- Mix everything: Use a spatula or spoon to combine all ingredients until well blended.
- Fold in blueberries: Gently add fresh blueberries without mashing them.
- Form the bites: Roll a small amount of mixture into balls about 1 inch in diameter and place on a parchment-lined baking sheet.
- Chill and firm up: Refrigerate for at least 30 minutes to help bites firm up.
- Store properly: Transfer to an airtight container and keep in the fridge for up to a week.
