- 1 cup lemon cake mix
- 1/4 cup unsalted butter, melted
- 1 egg
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a mini muffin pan with mini paper liners.
- Mix together lemon cake mix, melted butter, and egg until smooth.
- Fill each muffin cup halfway with the lemon cake mixture.
- Make the cream cheese mixture by blending softened cream cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest until creamy.
- Add the cream cheese filling over the lemon cake layer, filling cups to three-quarters full.
- Bake for 15-18 minutes until set and slightly golden.
- Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Serve as is or garnish with whipped cream or fresh fruit.
