Description

Delightful mini cheesecakes bursting with zesty lemon flavor, perfect for any occasion.


Ingredients

  • 1 cup lemon cake mix
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a mini muffin pan with mini paper liners.
  3. Mix together lemon cake mix, melted butter, and egg until smooth.
  4. Fill each muffin cup halfway with the lemon cake mixture.
  5. Make the cream cheese mixture by blending softened cream cheese, powdered sugar, vanilla extract, lemon juice, and lemon zest until creamy.
  6. Add the cream cheese filling over the lemon cake layer, filling cups to three-quarters full.
  7. Bake for 15-18 minutes until set and slightly golden.
  8. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  9. Serve as is or garnish with whipped cream or fresh fruit.

To keep them fresh, store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
