Ingredients

  • 1 lb chicken breast, diced
  • 1 package gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lemon, juice and zest
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Cook the diced chicken breast for about 5-7 minutes until browned.
  3. Add the minced garlic and cook for one more minute.
  4. Pour in the chicken broth and stir to combine.
  5. Cook the gnocchi according to package instructions, usually about 2-3 minutes.
  6. Add the lemon juice and zest along with the spinach, cooking until wilted.
  7. Season to taste with salt and pepper.
  8. Serve hot with grated Parmesan cheese on top.
