- 1 lb chicken breast, diced
- 1 package gnocchi
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon, juice and zest
- 1 cup spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Cook the diced chicken breast for about 5-7 minutes until browned.
- Add the minced garlic and cook for one more minute.
- Pour in the chicken broth and stir to combine.
- Cook the gnocchi according to package instructions, usually about 2-3 minutes.
- Add the lemon juice and zest along with the spinach, cooking until wilted.
- Season to taste with salt and pepper.
- Serve hot with grated Parmesan cheese on top.
