Ingredients
1 cup mascarpone cheese, cold
1/2 cup heavy whipping cream
1/3 cup powdered sugar
1 tbsp lemon zest
2 tbsp fresh lemon juice
1 tsp vanilla extract
Instructions
1. Add mascarpone cheese to a mixing bowl and briefly stir until smooth.
2. Pour in heavy cream and beat on medium speed until thickened.
3. Add powdered sugar, lemon zest, lemon juice, and vanilla extract.
4. Continue whipping until light, fluffy, and smooth.
5. Taste and adjust sweetness or lemon as desired.
6. Use immediately or refrigerate until ready to use.
Notes
Do not overwhip or the mascarpone may curdle.
Best used chilled for clean spreading and piping.
Pairs beautifully with berries, sponge cakes, and pastries.
