Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a cupcake pan with liners.
- Mix dry ingredients in a bowl: flour, baking powder, baking soda, salt, and poppy seeds.
- Cream softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add eggs one at a time, mixing well after each.
- Incorporate sour cream, lemon juice, lemon zest, and vanilla until combined.
- Combine the dry and wet ingredients, mixing until just combined.
- Fill cupcake liners two-thirds full.
- Bake for 18-20 minutes, checking doneness with a toothpick.
- Cool in the pan for 5 minutes, then on a wire rack.
- Make the frosting by mixing butter and powdered sugar, then adding blackberry puree.
- Frost cooled cupcakes with blackberry frosting.
