Description
A soft, moist sponge cake layered with creamy mascarpone and infused with alcohol-free lemon syrup for a bright, sunny flavor.
Ingredients
2 cups all-purpose flour
1 1/2 cups sugar
4 large eggs
1 cup milk
1/2 cup vegetable oil
2 tsp baking powder
1/2 tsp salt
1 cup mascarpone cheese
1 cup heavy cream
1/2 cup powdered sugar
1 tsp vanilla extract
Zest of 2 lemons
1 cup lemon syrup (alcohol-free)
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
2. Whip eggs and sugar until pale and fluffy.
3. Fold in flour, baking powder, salt, milk, and oil.
4. Pour into pans and bake 25–30 minutes.
5. Cool layers completely, then brush with lemon syrup.
6. Whip mascarpone, cream, powdered sugar, vanilla, and lemon zest until smooth.
7. Spread filling between layers and frost outside.
8. Chill before serving.
Notes
For extra lemon flavor, add more zest to the filling.
Serve chilled for best texture.
