Ingredients

¼ cup powdered sugar

½ cup cold unsalted butter, cubed

1 egg yolk

Pinch of salt

1 cup fresh mango puree (strained)

½ cup sugar

3 egg yolks

2 tablespoons lemon juice

¼ cup unsalted butter (cubed)

1 teaspoon vanilla extract (optional)

1 tablespoon cornstarch (optional for thicker curd)


Instructions

1. Combine flour, sugar, and salt. Cut in butter until crumbly. Add yolk and form dough. Chill 30 minutes.

2. Press chilled dough into tart pan. Prick with a fork and bake at 350°F (175°C) for 15–18 minutes until golden.

3. In a saucepan, whisk mango puree, sugar, yolks, and lemon juice over medium-low heat until thickened (~8–10 mins).

4. Remove from heat. Stir in cubed butter until smooth and glossy.

5. (Optional) Strain curd through fine mesh for ultra-smooth finish.

6. Pour curd into cooled tart shell. Smooth surface and chill for 4 hours or until set.

7. Garnish with mango slices, mint, or toasted coconut before serving.

Notes

Use ripe mangoes like Ataulfo or Alphonso for the best flavor.

Strain mango puree for silky smooth curd.

Chill tart overnight for firmer slices and deeper flavor.
