A delightful dessert combining creamy mango mousse and soft sponge cake, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 ripe mangoes, pureed
  • 1 cup heavy cream
  • 1/2 cup sugar (for mousse)
  • 1 tablespoon gelatin
  • 1/4 cup water (for gelatin)
  • 1 cup mango curd (eggless)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a round cake pan by greasing and flouring it.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the milk and vanilla extract.
  6. Fold in the flour until just combined.
  7. Bake in the preheated oven for about 25-30 minutes.
  8. Cool the cake completely in the pan.
  9. Prepare the gelatin by dissolving it in the water and letting it bloom.
  10. Whip the heavy cream with sugar until soft peaks form.
  11. Combine the mango puree into the whipped cream and fold in the bloomed gelatin.
  12. Assemble the mousse over the cooled sponge cake.
  13. Refrigerate for at least 4 hours until set.
  14. Top with mango curd before serving.

Notes

Use ripe mangoes for the best flavor. Decorate with fresh mango slices if desired.
