- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 ripe mangoes, pureed
- 1 cup heavy cream
- 1/2 cup sugar (for mousse)
- 1 tablespoon gelatin
- 1/4 cup water (for gelatin)
- 1 cup mango curd (eggless)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a round cake pan by greasing and flouring it.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the milk and vanilla extract.
- Fold in the flour until just combined.
- Bake in the preheated oven for about 25-30 minutes.
- Cool the cake completely in the pan.
- Prepare the gelatin by dissolving it in the water and letting it bloom.
- Whip the heavy cream with sugar until soft peaks form.
- Combine the mango puree into the whipped cream and fold in the bloomed gelatin.
- Assemble the mousse over the cooled sponge cake.
- Refrigerate for at least 4 hours until set.
- Top with mango curd before serving.
Notes
Use ripe mangoes for the best flavor. Decorate with fresh mango slices if desired.
