Description
Bright, fruity cupcakes with layers of sweet mango and strawberry flavor like a tropical sunset in every bite. Perfectly fluffy and topped with a smooth mango-strawberry swirl frosting.
Ingredients
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup milk
1/4 cup mango puree
1/4 cup strawberry puree
1 tsp vanilla extract
Yellow and pink food coloring (optional)
For the frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tbsp mango puree
2 tbsp strawberry puree
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In another bowl, beat butter and sugar until fluffy.
4. Add eggs one at a time, then mix in vanilla.
5. Alternate adding dry ingredients and milk until combined.
6. Divide batter into two bowls — mix mango puree into one and strawberry puree into the other.
7. Add a few drops of yellow food coloring to the mango batter and pink to the strawberry if desired.
8. Spoon alternating dollops of each batter into liners to create a swirl effect.
9. Bake 18–20 minutes or until a toothpick comes out clean.
10. Cool completely before frosting.
11. For the frosting: Beat butter until creamy, gradually add powdered sugar, then divide into two bowls.
12. Mix mango puree into one and strawberry puree into the other.
13. Spoon both frostings side by side into a piping bag for a two-tone swirl.
14. Pipe onto cupcakes and enjoy!
Notes
Use fresh or frozen fruit purees for the best flavor.
Chill frosting slightly before piping if too soft.
Top with small slices of mango and strawberry for garnish.
