Description

A light and flavorful Mediterranean-style baked sea bass infused with olive oil, garlic, lemon, and fresh herbs  perfect for a healthy and elegant dinner.


Ingredients

Scale

2 whole sea bass, cleaned and scaled (about 1 lb each)

3 tbsp olive oil

3 garlic cloves, minced

1 lemon, thinly sliced

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/2 cup cherry tomatoes, halved

1/4 cup kalamata olives, pitted

2 tbsp fresh parsley, chopped


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Pat the sea bass dry with paper towels and place on the prepared sheet.

3. In a small bowl, mix olive oil, garlic, oregano, salt, and pepper.

4. Brush the mixture all over the fish, including inside the cavities.

5. Stuff the fish with lemon slices and a few cherry tomatoes.

6. Scatter the remaining tomatoes and olives around the fish.

7. Bake for 20–25 minutes, or until the fish is cooked through and flakes easily.

8. Garnish with chopped parsley and serve with extra lemon wedges.

Notes

This recipe also works well with snapper or trout.

For extra flavor, drizzle with a touch of balsamic glaze before serving.

Pair with roasted potatoes or a fresh green salad for a complete meal.
