Ingredients
2 cans chickpeas, drained & rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
1 bell pepper, diced
1/4 cup fresh parsley or mint, chopped
1/4 cup extra virgin olive oil
Juice of 1 lemon
1 clove garlic, minced
1 tsp dried oregano
Salt & pepper to taste
Instructions
1. Rinse and drain chickpeas.
2. Chop all vegetables and herbs.
3. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
4. Combine chickpeas, vegetables, and herbs in a large bowl.
5. Pour dressing over salad and toss gently.
6. Let sit for 10 minutes before serving.
