Ingredients

- 1 cup lentils
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold running water.
- Cook the lentils in a medium-sized pot with 2 cups of water, simmering for 20-25 minutes.
- Combine the cooled lentils with diced cucumber, bell pepper, cherry tomatoes, red onion, and parsley in a large mixing bowl.
- Make the dressing by whisking together olive oil and balsamic vinegar, adding salt and pepper to taste.
- Mix the dressing with the lentil and vegetable mixture, tossing gently to combine.
- Serve immediately or chill in the refrigerator before serving.
Notes
Let the salad sit for 30 minutes to an hour to allow flavors to meld. Store in an airtight container for up to 3-5 days.
