Description

A flavorful Mediterranean quesadilla filled with fresh spinach, feta, and mozzarella, perfect for lunch or a light dinner.


Ingredients

  • 2 large flour tortillas
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • ½ cup mozzarella cheese, shredded
  • ¼ cup sun-dried tomatoes, chopped (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Wash the spinach and chop it. If using sun-dried tomatoes, chop them as well.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Cook the spinach for 2-3 minutes until wilted.
  4. Add the crumbled feta, shredded mozzarella, and sun-dried tomatoes if using. Season with salt and pepper and mix.
  5. Assemble the quesadilla by spreading the filling on one tortilla and topping with the second tortilla.
  6. Cook the quesadilla in the skillet for 3-4 minutes on each side until golden brown and crispy.
  7. Cut into wedges and serve immediately.
