- 2 large flour tortillas
- 1 cup fresh spinach, chopped
- ½ cup feta cheese, crumbled
- ½ cup mozzarella cheese, shredded
- ¼ cup sun-dried tomatoes, chopped (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Wash the spinach and chop it. If using sun-dried tomatoes, chop them as well.
- Heat the olive oil in a large skillet over medium heat.
- Cook the spinach for 2-3 minutes until wilted.
- Add the crumbled feta, shredded mozzarella, and sun-dried tomatoes if using. Season with salt and pepper and mix.
- Assemble the quesadilla by spreading the filling on one tortilla and topping with the second tortilla.
- Cook the quesadilla in the skillet for 3-4 minutes on each side until golden brown and crispy.
- Cut into wedges and serve immediately.

Serve with dipping sauces like tzatziki, hummus, or a fresh salad for a complete meal.
