- 2 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 garlic clove (minced)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the ingredients: Gather all your ingredients, rinse the salmon fillets, and zest and juice the lemon.
- Cook the garlic: Heat olive oil in a skillet and cook the minced garlic for 1 minute until fragrant.
- Sear the salmon: Add the salmon fillets to the skillet, season, and cook for about 4-5 minutes on each side. Remove and set aside.
- Toast the orzo: In the same skillet, add orzo pasta and toast for 2 minutes.
- Add the broth and lemon juice: Pour in the broth and lemon juice, deglazing the skillet.
- Cook the orzo: Let the orzo simmer until al dente, about 8-10 minutes, adding more liquid as needed.
- Finish with lemon zest: Stir in lemon zest and adjust seasoning.
- Combine and serve: Place orzo on plates, top with salmon, and garnish with parsley.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently with a splash of broth.
