Description
These classic Mexican Churros are crispy on the outside, soft on the inside, and coated in cinnamon sugar perfect for dipping in chocolate or caramel sauce!
Ingredients
1 cup water
2 ½ tbsp granulated sugar
½ tsp salt
2 tbsp unsalted butter
1 cup all-purpose flour
2 large eggs
½ tsp vanilla extract
Oil, for frying (vegetable or canola)
½ cup granulated sugar + 1 tsp ground cinnamon (for coating)
Instructions
1. In a saucepan, combine water, sugar, salt, and butter. Bring to a boil, then reduce heat and stir in flour until a dough forms. Remove from heat and let cool slightly.
2. Beat in eggs one at a time, mixing until smooth. Stir in vanilla extract.
3. In a large pot, heat 2 inches of oil to 350°F (175°C).
4. Spoon dough into a piping bag fitted with a large star tip. Pipe 4–6 inch strips into the hot oil, cutting with scissors.
5. Fry until golden brown, about 2–3 minutes per side. Drain on paper towels.
6. Roll warm churros in the cinnamon-sugar mixture.
7. Serve with chocolate sauce, caramel, or dulce de leche for dipping.
Notes
Let the dough cool slightly before adding eggs to avoid scrambling.
For extra crispiness, double-fry the churros briefly after the first fry.
Serve churros immediately — they’re best when fresh and warm.
