Description
These Mini Creamy Chicken and Mushroom Blizzards are flaky, bite-sized pastry cups filled with a rich, savory chicken and mushroom sauce. Perfect for parties, holiday appetizers, or cozy comfort-food snacking.
Ingredients
1 tbsp olive oil
1 tbsp butter
1/2 small onion, finely diced
1 cup mushrooms, finely chopped
1 cup cooked chicken, shredded or diced
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup chicken broth
1/4 cup Parmesan cheese, grated
1 tbsp flour (optional, for thickening)
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp thyme
1 sheet puff pastry or 1 tube crescent dough
Fresh parsley for garnish
Instructions
1. Preheat the oven to 375°F (190°C). Grease a mini muffin pan.
2. Heat olive oil and butter in a skillet. Sauté onions for 2–3 minutes.
3. Add mushrooms and cook until softened and browned.
4. Stir in garlic and cook for another 30 seconds.
5. Add cooked chicken, thyme, salt, and pepper.
6. Pour in heavy cream and chicken broth. Simmer for 3 minutes.
7. Add Parmesan and stir until creamy. If needed, sprinkle flour to thicken.
8. Cut puff pastry into squares and press into mini muffin cups.
9. Fill each with the chicken-mushroom mixture.
10. Bake for 12–15 minutes, or until golden and bubbling.
11. Garnish with parsley and serve warm.
Notes
You can use rotisserie chicken for faster prep.
Add a dash of white wine to the sauce for extra flavor.
These freeze well — reheat in the oven for best texture.
