- 200g digestive biscuits
- 100g unsalted butter, melted
- 400g cream cheese
- 100g powdered sugar
- 200ml heavy cream
- 2 teaspoons vanilla extract
- Kinder Bueno bars, chopped
- Chocolate sauce for drizzling
Instructions
- Prepare the Biscuit Crust: Start by crushing the digestive biscuits into fine crumbs. Place the biscuits in a plastic bag and use a rolling pin or pulse them in a food processor. Transfer to a mixing bowl, add melted butter, and mix until coated.
- Form the Crust in Molds: Press the biscuit mixture into the bottom of mini cheesecake molds. Use the back of a spoon to ensure the crust is compact and level.
- Mix the Cream Cheese Filling: Combine cream cheese and powdered sugar in a bowl. Blend until smooth and creamy with no lumps.
- Whip the Heavy Cream: In another bowl, pour heavy cream and add vanilla extract. Whip until soft peaks form.
- Fold in the Cream and Kinder Bueno: Gently fold whipped cream into the cream cheese mixture, then add chopped Kinder Bueno bars and fold until evenly distributed.
- Spoon the Cheesecake Mixture into Molds: Spoon cheesecake mixture onto the crusts in the molds, leveling the tops with a spatula.
- Refrigerate to Set: Cover molds with plastic wrap and refrigerate for at least 4 hours until fully set.
- Serve and Enjoy: Remove cheesecakes from the molds and drizzle with chocolate sauce. Garnish with extra pieces of Kinder Bueno.
