Ingredients

1 cup rolled oats
1/2 cup vanilla protein powder
1/2 cup almond butter
2 tbsp honey or maple syrup
1/2 tsp mint extract
1/4 cup mini dark chocolate chips
2–3 tbsp almond milk (if needed)
Instructions
1. Mix oats, protein powder, and chocolate chips.
2. Add nut butter, honey, and mint extract.
3. Stir until combined; add almond milk if dry.
4. Roll into balls and place on a tray.
5. Chill for 15 minutes before serving.
Notes
Store in fridge up to 1 week or freeze for 3 months.
Nut-free option: sunflower seed butter.
