Description

These Molten Lava Cakes are rich, decadent, and indulgent  with a gooey chocolate center that flows when you cut into it. Perfect for special occasions, date nights, or anytime you crave a warm, chocolatey treat!


Ingredients

For the Cakes:

½ cup (115g) unsalted butter

4 oz (115g) semi-sweet or dark chocolate, roughly chopped

2 large eggs

2 large egg yolks

¼ cup (50g) granulated sugar

1 tsp vanilla extract

2 tbsp all-purpose flour

A pinch of salt

For Preparing Ramekins:

Butter and cocoa powder

Optional for Serving:

Vanilla ice cream or whipped cream

Fresh berries

Powdered sugar for dusting


Instructions

1. Preheat the oven to 425°F (220°C). Butter 4 small ramekins (6 oz each) and dust lightly with cocoa powder.

2. In a heatproof bowl, melt butter and chocolate together over simmering water (or microwave in 20-second intervals) until smooth and glossy.

3. In a separate bowl, whisk eggs, egg yolks, sugar, and vanilla until thick and pale (1–2 minutes).

4. Slowly whisk the melted chocolate into the egg mixture. Sift in flour and salt, stirring gently until combined.

5. Divide the batter evenly among ramekins. Place on a baking sheet and bake for 12–14 minutes, until edges are set but centers remain soft.

6. Let cool 1 minute, then carefully invert each cake onto a plate. Dust with powdered sugar and serve warm with ice cream or fresh berries.

Notes

Use high-quality chocolate for the best flavor and gooey texture.

Don’t overbake; the center should be soft and molten.

Ramekins can be prepared ahead of time and stored in the refrigerator until baking.

Serve immediately for the best lava effect and enjoy with your favorite toppings.
