Savory Monterey Chicken a juicy, flavorful chicken dish topped, tangy barbecue sauce, melted cheese, and fresh tomatoes for the perfect balance of sweet, savory, and cheesy goodness.
Ingredients
4 boneless, skinless chicken breasts
1/2 cup barbecue sauce
1 cup shredded Monterey Jack cheese (or a mix of Jack and cheddar)
1 small tomato, diced
2 green onions, chopped
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
3. Season chicken breasts with salt and pepper.
4. In the same skillet, heat olive oil over medium-high heat. Sear chicken for 2–3 minutes per side until lightly browned.
5. Transfer chicken to a baking dish and brush each piece generously with barbecue sauce.
