Soft, moist muffins bursting with juicy peaches and topped with a buttery cinnamon crumble these Peach Cobbler Muffins taste just like your favorite summer dessert in breakfast form.
Ingredients
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/3 cup melted butter
1/2 cup milk
1 large egg
1 tsp vanilla extract
1 1/2 cups diced fresh or canned peaches (drained)
Topping:
1/4 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
2 tbsp cold butter, cubed
Instructions
1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
3. In another bowl, combine melted butter, milk, egg, and vanilla; whisk until smooth.
4. Pour wet ingredients into dry ingredients and stir gently until just combined.
5. Fold in diced peaches without overmixing.
6. Spoon batter evenly into muffin cups, filling about 3/4 full.
7. Make the topping by mixing brown sugar, flour, and cinnamon, then cutting in cold butter until crumbly.
8. Sprinkle crumble topping evenly over the muffins.
9. Bake for 20–22 minutes or until golden brown and a toothpick inserted in the center comes out clean.
10. Cool in pan for 5 minutes, then transfer to a wire rack.
Notes
Use frozen peaches (thawed and drained) if fresh are out of season.
Add a drizzle of vanilla glaze for a dessert-style finish.
Store muffins in an airtight container for up to 3 days or freeze for later.
