Ingredients
2 tsp olive oil
1 cup mushrooms, sliced
1 cup fresh spinach leaves
4 large eggs
2 tbsp milk (or cream)
1/4 tsp salt
1/4 tsp black pepper
2 tbsp shredded cheese (optional)
Instructions
1. Whisk eggs with milk, salt, and pepper until smooth
2. Heat olive oil in a nonstick skillet over medium heat
3. Add mushrooms and sauté 3–4 minutes until golden
4. Stir in spinach and cook until wilted
5. Pour in egg mixture and cook, stirring gently, until softly set
6. Top with cheese if desired, then serve warm
