A quick and healthy Mushroom and Tofu Stir-Fry that combines protein-rich tofu and earthy mushrooms for a satisfying meal.
Ingredients

- 1 block firm tofu, cubed
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Optional vegetables (e.g., bell peppers, broccoli, snap peas)
- Salt and pepper to taste
Instructions
- Prepare the tofu by pressing it to remove excess moisture and cutting it into cubes.
- Heat a large pan or wok over medium heat and add the vegetable oil.
- Cook the cubed tofu in the hot oil, stirring occasionally, until golden brown and crispy, about 8-10 minutes.
- Add the sliced mushrooms to the pan and cook for another 5-7 minutes, stirring occasionally.
- Add the minced garlic and ginger; cook for about a minute until fragrant.
- Pour in the soy sauce and mix well, cooking for an additional 2-3 minutes.
- Add optional vegetables and cook until tender.
- Season with salt and pepper to taste.
- Serve hot over rice or noodles, garnished with green onions or sesame seeds.
Notes
For a flavor boost, consider adding a teaspoon of sesame oil or a dash of rice vinegar at the end of cooking.
