Description

A quick and healthy Mushroom and Tofu Stir-Fry that combines protein-rich tofu and earthy mushrooms for a satisfying meal.


Ingredients

  • 1 block firm tofu, cubed
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Optional vegetables (e.g., bell peppers, broccoli, snap peas)
  • Salt and pepper to taste

Instructions

  1. Prepare the tofu by pressing it to remove excess moisture and cutting it into cubes.
  2. Heat a large pan or wok over medium heat and add the vegetable oil.
  3. Cook the cubed tofu in the hot oil, stirring occasionally, until golden brown and crispy, about 8-10 minutes.
  4. Add the sliced mushrooms to the pan and cook for another 5-7 minutes, stirring occasionally.
  5. Add the minced garlic and ginger; cook for about a minute until fragrant.
  6. Pour in the soy sauce and mix well, cooking for an additional 2-3 minutes.
  7. Add optional vegetables and cook until tender.
  8. Season with salt and pepper to taste.
  9. Serve hot over rice or noodles, garnished with green onions or sesame seeds.

Notes

For a flavor boost, consider adding a teaspoon of sesame oil or a dash of rice vinegar at the end of cooking.
