Description
A dreamy no-bake dessert that’s naturally sweetened, dairy-free, gluten-free, and free from flour, eggs, butter, oil, or added sugar.
Ingredients
2 cups fresh strawberries
1 can full-fat coconut milk (chilled overnight)
1 tbsp lemon juice
1 tsp vanilla extract
1–2 tbsp maple syrup (optional)
3 tbsp chia seeds
1 cup pitted dates
1 cup raw nuts (cashews, almonds, or sunflower seeds)
Instructions
1. Blend dates and nuts until sticky, press into springform pan.
2. Blend strawberries, coconut milk, lemon juice, vanilla, and optional syrup until smooth.
3. Stir in chia seeds, let sit 10 mins.
4. Pour over crust, smooth the top.
5. Refrigerate 4–6 hours or until firm.
6. Garnish with fresh strawberries or mint.
7. Slice and serve chilled.
Notes
Make sure to use full-fat coconut milk for the best texture.
You can freeze slices for a refreshing frozen treat.
