Ingredients
2 cups old-fashioned rolled oats
1½ teaspoons ground cinnamon
½ teaspoon baking powder
¼ teaspoon salt
2 cups milk (dairy or non-dairy)
2 large eggs
⅓ cup maple syrup or honey
1½ teaspoons vanilla extract
2 tablespoons melted butter or coconut oil
2 apples, peeled and diced
½ cup chopped walnuts or pecans (optional)
Butter or cooking spray (for greasing)
Instructions
1. Preheat oven to 350°F (175°C). Grease an 8×8 or 9×9-inch baking dish.
2. In a large mixing bowl, combine oats, cinnamon, baking powder, and salt.
3. In another bowl, whisk together milk, eggs, maple syrup, vanilla, and melted butter or oil.
4. Pour wet ingredients into the dry and stir to combine. Fold in diced apples and nuts if using.
5. Transfer mixture to the prepared baking dish and spread evenly.
6. Bake for 35–40 minutes until golden and the center is set.
7. Cool slightly before slicing. Serve warm or chilled with yogurt, milk, or nut butter.
