Description
Old Fashioned Rice Pudding made with a simple rice base, creamy milk custard, warm spices, and optional raisins. A timeless comfort dessert served warm or chilled.
Ingredients
For the Rice Base:
1 cup uncooked medium-grain white rice
2 cups water
Pinch of salt
For the Pudding:
4 cups whole milk (divided: 3 cups for cooking, 1 cup for tempering)
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup raisins (optional)
For Serving:
Extra cinnamon for sprinkling
Whipped cream (optional)
Instructions
1. In a medium saucepan, combine rice, water, and a pinch of salt. Bring to a boil, reduce heat, and simmer covered for 15–20 minutes until rice is tender and water absorbed.
2. Stir in 3 cups of milk and sugar. Cook uncovered over medium-low heat, stirring often, for 20 minutes until thickened.
3. In a bowl, whisk eggs with the remaining 1 cup of milk. Slowly add a ladle of the hot rice mixture into the egg mixture to temper.
4. Gradually stir the tempered mixture back into the saucepan. Cook for 2–3 more minutes until pudding thickens.
5. Remove from heat and stir in vanilla, cinnamon, nutmeg, and raisins (if using).
6. Serve warm or chilled, topped with whipped cream and a sprinkle of cinnamon.
Notes
Medium-grain rice gives the best creamy texture.
For extra richness, replace 1 cup of milk with half-and-half or coconut milk.
Pudding thickens as it cools — stir in a splash of milk before reheating.
