One-Pan Bold Honey BBQ Chicken Rice

Description

A flavorful and easy one-pan dish that combines chicken, rice, and vegetables with a sweet and tangy honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat.
  2. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika, then sear for about 5 minutes on each side until nicely browned.
  3. In a small bowl, whisk together BBQ sauce and honey, then pour over the browned chicken.
  4. Add rice and chicken broth to the skillet, stirring to combine and ensure rice is evenly distributed.
  5. Bring to a simmer, cover, and cook on low heat for about 20 minutes or until rice is tender and has absorbed most of the broth.
  6. Add the mixed vegetables on top of the rice and chicken to steam during the last 5 minutes of cooking.
  7. Remove from heat and let sit for about 5 minutes. Fluff rice gently with a fork before serving.

Notes

For extra flavor, top each serving with additional BBQ sauce and consider serving with garlic bread or a side salad.
