Description
A flavorful and easy one-pan dish that combines chicken, rice, and vegetables with a sweet and tangy honey BBQ sauce.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat.
- Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika, then sear for about 5 minutes on each side until nicely browned.
- In a small bowl, whisk together BBQ sauce and honey, then pour over the browned chicken.
- Add rice and chicken broth to the skillet, stirring to combine and ensure rice is evenly distributed.
- Bring to a simmer, cover, and cook on low heat for about 20 minutes or until rice is tender and has absorbed most of the broth.
- Add the mixed vegetables on top of the rice and chicken to steam during the last 5 minutes of cooking.
- Remove from heat and let sit for about 5 minutes. Fluff rice gently with a fork before serving.
Notes
For extra flavor, top each serving with additional BBQ sauce and consider serving with garlic bread or a side salad.
