Description
Juicy herby chicken and nutty wild rice cooked together in one pan for an easy, flavorful dinner.
Ingredients
4 bone-in chicken thighs
1 cup wild rice
2 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
2 celery stalks, chopped
3 cups chicken broth
1 tbsp fresh thyme
1 tbsp fresh rosemary
1 tbsp parsley
1 tsp lemon zest
Salt and pepper to taste
Instructions
1. Pat chicken dry and season with herbs, salt, and pepper.
2. Heat oil in a skillet and sear chicken until golden.
3. Remove chicken, sauté onions, garlic, and celery.
4. Add wild rice and toast briefly.
5. Pour in broth and return chicken to skillet.
6. Cover and bake at 375°F (190°C) for 40–45 minutes.
7. Check doneness, rest for 5 minutes, and serve.
Notes
For extra flavor, marinate chicken 30 minutes before cooking.
Substitute wild rice with brown rice for a quicker version.
Leftovers reheat well with a splash of broth.
