Description
Fluffy one-pan dumplings made with cornmeal, coconut milk, and sweet corn kernels.
Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1 cup coconut milk
1 cup corn kernels
2 tbsp fresh herbs (optional)
Instructions
1. Mix dry ingredients in a bowl.
2. Add coconut milk and stir gently to form dough.
3. Fold in corn kernels and herbs.
4. Heat skillet with oil over medium heat.
5. Drop spoonfuls of dough into skillet.
6. Cook covered for 10–12 minutes, flipping halfway.
7. Let dumplings rest 2 minutes before serving.
Notes
Do not overmix dough for fluffy dumplings.
Use fresh or frozen corn for best results.
Customize with herbs and spices for flavor variations.
