Ingredients
2 large onions, sliced into 1/2-inch rings
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 large eggs
1 cup milk
2 cups panko breadcrumbs
1 teaspoon paprika
1/2 teaspoon garlic powder
Cooking spray or olive oil spray
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Separate onion slices into rings and set aside.
3. In a bowl, whisk together flour, baking powder, and salt.
4. In another bowl, whisk eggs and milk together.
5. In a third bowl, combine panko breadcrumbs, paprika, and garlic powder.
6. Dip each onion ring into the flour mixture, then into the egg mixture, and finally coat with the breadcrumb mixture.
7. Place coated onion rings on the prepared baking sheet in a single layer.
8. Lightly spray with cooking spray to help them crisp.
9. Bake for 15–20 minutes, flipping halfway through, until golden brown and crunchy.
10. Serve immediately with ketchup, ranch, or your favorite dipping sauce.
Notes
Use sweet onions like Vidalia for a milder flavor.
Add a pinch of cayenne to the breadcrumb mix for extra heat.
Best enjoyed fresh from the oven — reheating may reduce crispiness.
