Ingredients

- 6 ounces shelled unsalted pistachios
- 1 cup plus 2 tablespoons all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 4 teaspoons candied orange, finely chopped
- 2 large eggs, beaten
- Zest of 1 orange
- 2 tablespoons orange juice
Instructions
- Preheat the oven to 350°F.
- Mix the flour, sugar, and baking powder in a bowl.
- Prepare the egg mixture by beating the eggs and adding the candied orange peel, orange zest, and orange juice.
- Combine the dry ingredients with the egg mixture, being careful not to overmix.
- Add the pistachios and fold them into the dough.
- Knead the dough lightly on a floured surface for 1-2 minutes and divide it into two equal pieces.
- Shape each piece into a log about 12 inches long and place them on a greased baking sheet.
- Bake for 20-25 minutes until lightly browned and firm to touch.
- Slice the logs diagonally into 1/2 inch slices after cooling for 10 minutes.
- Return the slices to the oven and bake for 5-7 minutes until crisp.
- Cool on a wire rack before storing in an airtight container.
Notes
For the best flavor, use fresh pistachios and oranges. You can also experiment with different nuts or flavors.
