Description

Delightful biscotti featuring the crunch of pistachios paired with zesty orange, perfect for coffee or tea.


Ingredients

  • 6 ounces shelled unsalted pistachios
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 4 teaspoons candied orange, finely chopped
  • 2 large eggs, beaten
  • Zest of 1 orange
  • 2 tablespoons orange juice

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the flour, sugar, and baking powder in a bowl.
  3. Prepare the egg mixture by beating the eggs and adding the candied orange peel, orange zest, and orange juice.
  4. Combine the dry ingredients with the egg mixture, being careful not to overmix.
  5. Add the pistachios and fold them into the dough.
  6. Knead the dough lightly on a floured surface for 1-2 minutes and divide it into two equal pieces.
  7. Shape each piece into a log about 12 inches long and place them on a greased baking sheet.
  8. Bake for 20-25 minutes until lightly browned and firm to touch.
  9. Slice the logs diagonally into 1/2 inch slices after cooling for 10 minutes.
  10. Return the slices to the oven and bake for 5-7 minutes until crisp.
  11. Cool on a wire rack before storing in an airtight container.

Notes

For the best flavor, use fresh pistachios and oranges. You can also experiment with different nuts or flavors.
