Description

Crispy, golden Parmesan-crusted chicken baked alongside tender roasted vegetables for a simple and satisfying one-pan dinner  packed with flavor and easy cleanup.


Ingredients

4 boneless, skinless chicken breasts

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (Italian-style or panko)

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil, divided

1 cup cherry tomatoes, halved

1 cup green beans, trimmed

1 small red bell pepper, sliced

1 small zucchini, sliced

Cooking spray or parchment paper


Instructions

1. Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper or lightly coat with cooking spray.

2. In a shallow bowl, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.

3. Brush chicken breasts lightly with 1 tablespoon of olive oil.

4. Press each chicken breast into the Parmesan-breadcrumb mixture to coat evenly on both sides.

5. Place coated chicken breasts on one side of the sheet pan.

6. In a bowl, toss cherry tomatoes, green beans, bell pepper, and zucchini with the remaining olive oil, salt, and pepper.

7. Spread vegetables on the other half of the sheet pan in an even layer.

8. Bake for 20–25 minutes or until chicken is golden brown and cooked through (internal temperature 165°F / 74°C).

9. For extra crispiness, broil for 1–2 minutes at the end.

10. Serve warm with a squeeze of lemon or a sprinkle of fresh herbs.

Notes

Use chicken tenders for faster cooking.

Try swapping veggies for broccoli, asparagus, or carrots.

Serve with a side of garlic mashed potatoes or a light salad for a complete meal.

Leftovers keep well in the fridge for up to 3 days and reheat beautifully.
