Crispy, cheesy, and irresistibly golden, these Air Fryer Parmesan Crusted Zucchini rounds make the perfect guilt-free snack or side dish. Ready in minutes, they’re crunchy on the outside and tender inside pure veggie magic!
Ingredients
2 medium zucchini, sliced into 1/4-inch rounds
1/2 cup grated Parmesan cheese
1/3 cup panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1/4 tsp paprika
1/4 tsp salt
1/8 tsp black pepper
1 large egg, beaten
Cooking spray or olive oil mist
Fresh parsley, chopped (for garnish)
Marinara sauce, for dipping (optional)
Instructions
1. Preheat your air fryer to 400°F (200°C) for about 3 minutes.
2. In a shallow bowl, whisk together Parmesan, panko, garlic powder, Italian seasoning, paprika, salt, and pepper.
3. Dip each zucchini slice into the beaten egg, then coat with the Parmesan-panko mixture, pressing gently to adhere.
4. Lightly spray the air fryer basket with cooking spray.
5. Arrange zucchini slices in a single layer (do not overcrowd). You may need to cook in batches.
6. Air fry for 8–10 minutes, flipping halfway through, until golden and crisp.
7. Remove and let cool slightly before serving.
8. Garnish with chopped parsley and serve with marinara sauce or ranch dip.
Notes
For a gluten-free version, use gluten-free breadcrumbs.
Add a touch of cayenne for a spicy kick.
These taste best fresh, but you can reheat them in the air fryer for 2–3 minutes to restore crispiness.
