Ingredients
2 cups seedless watermelon, cubed
2 ripe peaches, sliced or chopped
½ cup cucumber, diced
¼ cup red onion, very thinly sliced
¼ cup crumbled feta cheese
2 tablespoons fresh mint or basil, chopped
1 tablespoon olive oil
1 tablespoon lime juice
Salt and pepper, to taste
Instructions
1. In a large bowl, combine watermelon, peaches, cucumber, and red onion.
2. Drizzle with olive oil and lime juice. Gently toss to coat.
3. Sprinkle with salt and black pepper to taste.
4. Top with crumbled feta and chopped mint or basil.
5. Serve immediately, or chill for 15–20 minutes for deeper flavor.
Notes
Use very ripe but firm peaches to avoid mushy texture.
Feta adds creaminess and salt—omit for a dairy-free version.
