Thick, soft, and chewy peanut butter cookie bars baked in one pan rich peanut butter flavor, golden edges, and perfect for slicing and sharing.
Ingredients
1/2 cup unsalted butter, melted
1 cup creamy peanut butter
3/4 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, whisk together melted butter, peanut butter, granulated sugar, and brown sugar until smooth.
3. Beat in eggs and vanilla extract until fully combined.
4. In a separate bowl, whisk flour, baking powder, and salt.
5. Gradually stir dry ingredients into wet ingredients until a thick batter forms.
6. Spread batter evenly into prepared pan.
7. Bake for 20–25 minutes until edges are lightly golden and center is set.
8. Cool completely in the pan before slicing into bars.
Notes
Do not overbake to keep bars soft and chewy.
For extra indulgence, add chocolate chips or drizzle with melted chocolate.
Store bars in an airtight container for up to 5 days.
