Description
A warm, single-serve baked oatmeal with all the flavors of a peanut butter cookie.
Ingredients
1/2 cup rolled oats
1/4 tsp baking powder
Pinch of salt
1/4 tsp cinnamon
1 tbsp peanut butter (creamy, natural)
1/2 cup milk of choice
1 tbsp maple syrup or honey
1/2 tsp vanilla extract
1 egg or flax egg
Instructions
1. Preheat oven to 350°F (175°C).
2. Lightly grease a ramekin.
3. Mix oats, baking powder, salt, and cinnamon.
4. Whisk peanut butter, milk, egg, vanilla, and sweetener.
5. Combine wet and dry ingredients until just mixed.
6. Pour into ramekin and bake for 20–25 minutes.
7. Let cool 5 minutes before serving.
Notes
Swap milk with plant-based alternatives.
Use flax egg for vegan version.
Add chocolate chips, banana, or coconut for variations.
