Description
A fresh autumn salad with pears, gorgonzola, toasted nuts, and greens.
Ingredients
Scale
4 cups mixed greens
2 ripe pears, thinly sliced
1/2 cup gorgonzola crumbles
1/3 cup toasted walnuts or pecans
1/4 cup dried cranberries
3 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp honey
2 tbsp lemon juice
Salt & pepper to taste
Instructions
1. Wash and dry greens.
2. Slice pears thinly.
3. Toast nuts in skillet until fragrant.
4. Arrange greens in bowl.
5. Layer pears, cheese, nuts, and cranberries.
6. Whisk dressing and drizzle over salad.
7. Toss lightly and serve immediately.
Notes
Best served immediately after dressing.
Store undressed salad in fridge for up to 2 days.
