Description

Phirni is a rich and creamy Indian dessert made from rice and milk, flavored with cardamom and garnished with nuts.


Ingredients

  • 1 cup rice
  • 4 cups milk
  • 1/4 cup sugar
  • 1/4 tsp saffron threads
  • 1/4 cup mixed nuts (almonds, cashews, pistachios)
  • 1/2 tsp cardamom powder
  • 2 tbsp rose water (optional)

Instructions

  1. Soak the rice in water for about 2 hours.
  2. Grind the soaked rice to a coarse paste.
  3. Boil the milk in a heavy-bottomed pot over medium heat.
  4. Add the rice paste to the simmering milk while stirring continuously.
  5. Sweeten the mixture with sugar, saffron, and cardamom powder.
  6. Add the chopped nuts and rose water (if using).
  7. Cool the mixture at room temperature.
  8. Chill the Phirni in the refrigerator for a few hours before serving.

Notes

For best results, use full-fat milk and let Phirni chill for at least 4 hours to enhance the flavor.
