Phirni is a rich and creamy Indian dessert made from rice and milk, flavored with cardamom and garnished with nuts.
Ingredients

- 1 cup rice
- 4 cups milk
- 1/4 cup sugar
- 1/4 tsp saffron threads
- 1/4 cup mixed nuts (almonds, cashews, pistachios)
- 1/2 tsp cardamom powder
- 2 tbsp rose water (optional)
Instructions
- Soak the rice in water for about 2 hours.
- Grind the soaked rice to a coarse paste.
- Boil the milk in a heavy-bottomed pot over medium heat.
- Add the rice paste to the simmering milk while stirring continuously.
- Sweeten the mixture with sugar, saffron, and cardamom powder.
- Add the chopped nuts and rose water (if using).
- Cool the mixture at room temperature.
- Chill the Phirni in the refrigerator for a few hours before serving.
Notes
For best results, use full-fat milk and let Phirni chill for at least 4 hours to enhance the flavor.
