Description
A sweet and savory one-pan meal with tender chicken, juicy pineapple, and flavorful rice an easy tropical-inspired dinner ready in under 30 minutes.
Ingredients
2 tbsp olive oil
1 lb (450 g) boneless chicken breast, cut into bite-sized pieces
1 small onion, diced
1 red bell pepper, diced
2 garlic cloves, minced
1 cup jasmine rice (uncooked)
1 1/2 cups chicken broth
1 cup pineapple chunks (fresh or canned, drained)
2 tbsp soy sauce
1 tbsp brown sugar
1/2 tsp ground ginger
1/4 tsp chili flakes (optional)
Salt and pepper to taste
2 green onions, sliced (for garnish)
Sesame seeds (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add chicken pieces, season with salt and pepper, and cook until golden brown on all sides. Remove and set aside.
3. In the same skillet, add diced onion, bell pepper, and garlic. Sauté for 2–3 minutes until softened.
4. Add uncooked rice and stir for 1 minute to coat in the oil and flavor.
5. Pour in chicken broth, soy sauce, brown sugar, ginger, and chili flakes. Stir well.
6. Return the chicken to the pan and bring to a simmer.
7. Cover and cook for 15–18 minutes on low heat, until rice is tender and liquid is absorbed.
8. Stir in pineapple chunks and cook uncovered for 2–3 more minutes.
9. Garnish with green onions and sesame seeds before serving.
Notes
Use chicken thighs for extra juiciness.
Add a handful of frozen peas or cashews for texture and color.
Great for meal prep — reheats beautifully for lunch the next day.
