Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tbsp lemon zest
2 tbsp lemon juice
1/2 tsp vanilla extract
1 tsp pink food coloring
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup powdered sugar (for rolling)
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, cream butter and granulated sugar until light and fluffy.
3. Beat in egg, lemon zest, lemon juice, vanilla, and pink food coloring.
4. In a separate bowl, whisk flour, baking soda, and salt.
5. Gradually mix dry ingredients into wet ingredients until combined.
6. Scoop dough into balls and roll in powdered sugar.
7. Place on prepared baking sheets, spacing evenly.
8. Bake for 10–12 minutes until edges are set.
9. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra lemon flavor, add a pinch of lemon extract.
Do not overbake to keep cookies soft and chewy.
Store cookies in an airtight container for up to 4 days.
